Recipe of the Month (Burger reinvention!) Zucchini-Almond Veggie Burgers
from Lukas Volger's Veggie Burgers Every Which Way

| Ingredients - 4 small zucchini and/or yellow squash (14-15 ounces total), ends trimmed
- 1/2 teaspoon salt
- 1/4 cup almonds, toasted and finely chopped
- 3 tablespoon minced basil
- 1 tablespoon flour
- 1 egg
- 1/4 cup bread crumbs
- 1/4 teaspoon black pepper
- 1 tablespoon oil
Preheat the oven (or toaster oven) to 350° F.
Grate the zucchini on the bias so as to create larger strands,
using the large holes of a box grater. Toss with the salt and then leave
in a strainer for 15 minutes. Using your hands or by wrapping the
zucchini in cheesecloth, squeeze out any excess liquid.
Combine the zucchini with the almonds, basil, flour, egg, and
black pepper. Add the bread crumbs, adding more if the mixture hasn't
become pliable. (It will be a very wet mixture, though.) Shape into 4
patties.
Heat the oil in an oven-safe sauté pan over a medium flame. Cook
the burgers, 2 to 4 minutes per side, until golden brown. Transfer the
pan to the oven and cook for 12 to 15 minutes more, until firm. | |

Who do you want to
be? I went to the
movies the other day to see (if I dare to say) my favorite movie of
all times: Eat, Pray, Love. Besides the fact that my life paralleled Elizabeth Gilbert's in many ways, as I was watching the movie, it brought up questions like, "Who said we have to be the same person we were when we were young? Who said we have to carry the baggage labeled 'all
my mistakes' on our backs?" As the movie progressed I realized
there was a lot of forgiving of myself to do... because I could still
feel in my belly the ache of thinking of some of the those "mistakes" ... the hearts I broke when I was young because I didn't know better ... the words I said I wished I could take back ... the friends I let
go because I wasn't paying attention.
The good news is we can
reinvent ourselves and learn from all those mistakes. We can change
the things we don't like about ourselves and start fresh everyday!
We do need the contrast, the hardship, to become clear about what we like
and what makes us feel good, but we not need to hold unto those hardships forever! We can become free of our past and, like a character in a movie, choose
who we want to be today! And that's what I've been doing (that's even what we're doing at YBB!). So today and this fall I invite
you to reinvent yourself. Ask yourself: "How do I want to feel? Who do I want to
be?" If you have no clue, just say: "I want to know who I want
to be!" I believe with all my heart that yoga classes will definitely
help with redefining your identity and your place in the world!
Thank you for your
grace in these periods of reinventing the studio ! We are so
excited to be growing, and to be creating new ways of spreading the
sweetness of yoga in our community and the world. To your new self!

More exciting
things are happening with YBB! We now offer Corp Yoga -- bringing yoga to
your work place to create a sense of community and
comradery at work ... so you get a break to empty your mind and
nurture your body and spirit! If you haven't been able to find the time
to come to the studio, now we come to you! Call us and us ask how.

Yoga for Moms
We've been brainstorming for some time about how to help moms with young children at home
who want to come to yoga but don't have an affordable childcare provider, and we've got something for you! We've found Linda! She lives 2 minutes from the studio, at 41st and Van Dorn, and has
just opened a childcare. Her drop-in rate is only $4! If you are a mom who would love to do
yoga, call Linda and set it up so we can have the pleasure of treating

YBB Transformation For those who are curious about what's happening at YBB, we are building a second
yoga room for private sessions, semi privates and special classes!
Thomas and Gary Herrman Reinventing  | We're all on the go with so little time
to eat a nurturing meal, right? Now we offer a healthy solution! We're also creating a juice bar where we'll offer fresh made "in the moment" veggie juices, smoothies, teas, and local top of
the line coffee. You can grab something as you walk out of a yoga class, or you can stop in and treat yourself! We hope to have the juice bar operating
sometime in September!
We want to thank dearly all the people who use their hands, time and art into YBB
to make it such an amazing space!

"Many
of us struggle with balancing postures. We can't seem to find the
mind-body harmony that results in balanced strength. As we transition
from summer to fall, we may be able to draw inspiration from nature.
September 23rd
marks the fall equinox and there will be a full moon. This is a
powerful combination that could help us bring our bodies, minds,
spirits, and lives into balance-even if we cannot remain
motionless."
Fall
Equinox The
seasons pause in perfect balance of day and dark; sunset and
moonrise blend across horizon's arc. For months, tall grasses
have leaned away from summer's hot breath; now they straighten
in cool air and unfurl their plumes that float like hair on
water. Waves of swallows and gurgling martins swirl the space
between dawn and dusk. As the wind shifts its weight to the
north, a necklace of geese spills from the clouds, tugging the
blue shawl of night across prairie's sloping shoulders. Whirring
wings tip the balance of seasons until daylight recedes; darkness
advances; and fall creeps into the nest where summer slept.
Claudia
Reinhardt has been practicing yoga with Tataya and Thomas since they
moved to Lincoln. Originally from Illinois, Claudia lived in Iowa
before moving to Nebraska; she has also lived in Boston and Colorado.
After a long career in promotional writing and marketing
communications, she is now a writing tutor at Southeast Community
College and a freelance writer/editor. She has published poetry in
several literary journals, newsletters, and magazines, and we thank her for sharing this beautiful one not previously published with us!
